This is a skinny revision of my Sweet Potato-Marshmallow Coffee Creamer. Click the link to read more about it! 
  I actually like this version even better than the original recipe. The flavor of the sweet potato comes through a little bit more; it’s just a bonus that it calls for clean ingredients! While the original recipe is about 129 calories per serving, this skinny revision is about 37 calories per serving. 

Skinny Sweet Potato Marshmallow Creamer– makes 6 servings

½ C canned butternut squash puree
¼ C canned unsweetened sweet potato puree
25 drops Stevia extract
3 Tbsp. Brown sugar 
¼ C water
¼ tsp. kosher salt
1 ½ tsp cinnamon
¼ tsp freshly ground nutmeg
1 C almond milk
2 tsp clear vanilla flavoring (it tastes most like marshmallow)

In a small saucepan, stir together butternut squash puree, sweet potato puree, and cinnamon. Place pot on a medium-high heat and stir frequently for about 2 minutes. This cooks out the raw, “tinny” flavors. Add brown sugar and stir until smooth. Next, add water and salt. Stir frequently until mixture comes to a gentle simmer and thickens slightly. Remove from heat.
When mixture has mostly cooled, add almond milk, vanilla, and nutmeg. Stir to combine, transfer to a container, and store in the refrigerator. Some of the spices and thicker bits of the sweet potato puree might ultimately sink to the bottom of your coffee mug, so if you prefer to avoid that, strain the creamer before storing it.
Add desired amount to coffee and enjoy. On special occasions, garnish as pictured with mini marshmallows, and toast them if you have a blowtorch! Ten mini marshmallows is only 22 calories.
