The only thing that’s better than apple cider is spiced apple cider. Who doesn’t love it??
Tis the season to make an awesome fall weekend brunch. I promise it will be worth the effort– and if you don’t believe me, then make nothing more than one of these mimosas and I promise you’ll still be really happy.
These mimosas are rimmed with an optional cinnamon sugar, but it isn’t just any cinnamon sugar. I have a couple of special tricks so the sugar stays intact with crunch and sparkle, and doesn’t look dirtied with cinnamon. Wetting the rim of the glass with water or alcohol will just make for a wet sugar rim that slides down the glass and quickly dissolves. Beginning by dipping the rim in agave nectar helps the sugar adhere perfectly and stay still until you are ready to sip. Secondly, using a coarse microplane grater and a whole cinnamon stick makes nice flecks of cinnamon that visually stand out, as opposed to powdered cinnamon, which just makes the sugar look brown and dull.

Cinnamon Cider Mimosasserves 2-3
1 ¾ cup apple cider
¼ cup Fireball or spiced rum
Prosecco 

Cinnamon Sugar Rim
2 Tbsp. granulated sugar
Cinnamon stick
2 Tbsp agave nectar

Pour agave nectar into a small, wide bowl or container. Mix sugar and freshly grated cinnamon in a separate but similar bowl.
Dip the rim of the glass into the agave nectar. Hover the glass over the agave for a moment to ensure there’s no dripping. Next, dip the rim into the cinnamon sugar mixture and coat the agave completely. Set glass aside.

In a large glass measuring cup, measure apple cider, and Fireball. Mixture should total 2 cups.
Finally, pour desired amount of cider mix into rimmed serving glass. Top with prosecco or sparkling water and enjoy.
