Not only are classic pina coladas loaded with refined sugar, empty calories, and sometimes several grams of fat, they can be really bad if they aren’t made well. One thing I will not tolerate is icy, chunky, sloppy frozen drinks that are melted and watered down by the time the third sip has been swallowed. My pina coladas have a much more wholesome and consistent approach.
If you prefer a more slushy texture to a thick and creamy one, add extra coconut water and a few ice cubes. Put the ice cubes in the blender first so they can spend more time near the blade and be thoroughly crushed.

Pina Colada for Two

1 lb Frozen pineapple

⅔ C coconut water

½ C coconut rum (OR ½ C white rum + ½ tsp coconut extract)

3 Tbsp agave nectar or honey

Pinch salt

Blend all ingredients in a blender until smooth. If desired add frozen banana chunks, shredded coconut, or coconut milk.

Swirl pina colada on top of my Better-For-You Strawberry Daiquiri to make a Lava Flow! If you’ve added banana to the pina colada and mixed it with strawberry daiquiri, it’s called a Jamaican Smile!
